Ingredients
For the chicken
- 2 large chicken breasts (or 4 small)
- 3 tablespoons olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
For the bowls
- 2 cups cooked rice (white or brown)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup feta cheese
For the tzatziki sauce
- 1 cup Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tablespoon fresh dill (or 1 teaspoon dried)
- Salt & pepper to taste
Instructions
1. Marinate the chicken
In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
Add chicken and marinate for at least 30 minutes.
2. Cook the chicken
Grill or pan-cook chicken over medium heat for 5–7 minutes per side until fully cooked (165°F internal temp).
Let rest, then slice.
3. Make tzatziki
In a bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper. Mix well and chill until ready to use.
4. Build the bowls
Add rice to each bowl, then top with sliced chicken, tomatoes, cucumber, red onion, and feta.
5. Add sauce
Drizzle generously with tzatziki sauce.
6. Serve
Serve immediately and enjoy!
