Chicken & Spinach Lasagna Roll Ups with Pesto Alfredo š§ššæ
These Chicken & Spinach Lasagna Roll Ups are creamy, cheesy, and full of flavor! Tender lasagna noodles are rolled with a rich chicken and spinach filling, topped with a luscious pesto Alfredo sauce, and baked to bubbly perfection.

Ingredients
For the roll ups
- 9ā12 lasagna noodles
- 2 cups cooked shredded chicken
- 1 cup ricotta cheese
- 1 cup fresh spinach (chopped) or ½ cup frozen (thawed & drained)
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
For the sauce
- 2 cups Alfredo sauce (store-bought or homemade)
- 2ā3 tablespoons pesto
For topping
- 1½ā2 cups Italian shredded cheese blend
Instructions
1. Preheat oven
Preheat oven to 375°F and lightly grease a 9x13 baking dish.
2. Cook noodles
Boil lasagna noodles according to package directions. Drain and lay flat on parchment paper.
3. Make the filling
In a bowl, mix shredded chicken, ricotta, spinach, egg, garlic powder, Italian seasoning, salt, and pepper.
4. Prepare sauce
In a small bowl, combine Alfredo sauce and pesto. Stir until smooth.
5. Assemble roll ups
Spread a thin layer of filling onto each noodle, then roll tightly.
6. Layer the dish
Spread a layer of pesto Alfredo sauce on the bottom of the baking dish.
Place roll ups seam-side down. Pour remaining sauce over the top.
7. Add cheese
Sprinkle Italian shredded cheese evenly over the roll ups.
8. Bake
Cover with foil and bake for 25 minutes, then uncover and bake another 10ā15 minutes until bubbly and golden.
9. Serve
Let rest for 5ā10 minutes before serving.
