This Shrimp Fried Rice is a quick and flavorful meal packed with tender shrimp, scrambled eggs, veggies, and savory soy sauce. It’s perfect for using up leftover rice and comes together in under 30 minutes!

Ingredients

For the fried rice

  • 2 cups cooked and cooled white rice (day-old works best)
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons oil (vegetable or sesame)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Β½ teaspoon salt
  • Β½ teaspoon black pepper

For serving

  • 2 green onions, sliced
  • Sesame seeds (optional)

Instructions

1. Cook the shrimp

Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2–3 minutes until pink and cooked through. Remove and set aside.

2. Scramble the eggs

In the same skillet, add a little oil if needed and pour in beaten eggs. Scramble until cooked, then remove and set aside.

3. SautΓ© garlic and veggies

Add remaining oil to the skillet. Stir in garlic and cook for 30 seconds, then add mixed vegetables and cook for 2–3 minutes.

4. Add the rice

Add cooked rice, breaking up any clumps. Stir-fry for 3–4 minutes.

5. Season

Pour in soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Stir well to combine.

6. Combine

Return shrimp and eggs to the skillet. Toss everything together and cook for 1–2 minutes until heated through.

7. Serve

Garnish with green onions and sesame seeds. Serve hot.
