Ingredients
For the chicken
- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil or sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger (optional)
For the teriyaki sauce
- Β½ cup teriyaki sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey or brown sugar
- 1 teaspoon cornstarch
- ΒΌ cup water
For serving
- 2 cups cooked white or jasmine rice
- 2 cups broccoli florets
- 1 tablespoon sesame seeds
- 2 green onions, sliced (optional)
Instructions
1. Cook the rice
Prepare rice according to package directions and set aside.
2. Cook the chicken
Heat oil in a skillet over medium-high heat. Add chicken and cook for 5β6 minutes until browned and cooked through.
3. Add garlic and ginger
Stir in garlic and ginger and cook for 30 seconds until fragrant.
4. Cook the broccoli
Add broccoli to the skillet or steam separately until tender-crisp (about 3β4 minutes).
5. Make the sauce
In a small bowl, whisk together teriyaki sauce, soy sauce, honey, cornstarch, and water.
6. Combine
Pour sauce over chicken and broccoli. Stir and cook for 2β3 minutes until the sauce thickens and coats everything.
7. Assemble bowls
Spoon rice into bowls and top with teriyaki chicken and broccoli.
8. Garnish and serve
Sprinkle with sesame seeds and green onions if desired. Serve warm.
