🍪 Some Recipes Are Just Worth Passing Down

There's something about the smell of freshly baked chocolate chip cookies that instantly makes a house feel like home.

Maybe it's the memories of standing in the kitchen sneaking chocolate chips from the bag. Maybe it's the excitement of waiting for the oven timer to go off. Or maybe it's that first warm bite of a homemade cookie with perfectly melted chocolate.

Whatever it is, chocolate chip cookies have a way of bringing people together.

And today, we're taking that classic favorite and making it even better!

We're talking Brown Butter Chocolate Chip Cookies — golden edges, soft and chewy centers, puddles of melted chocolate, and a rich, nutty flavor that makes every bite absolutely irresistible.

The secret?

Brown butter! 🧈

If you've never baked with brown butter before, you're in for a treat.

🧈 What Makes Brown Butter So Special?

Brown butter, also known as beurre noisette, is simply regular butter that's been gently cooked until the milk solids turn golden brown.

As the butter cooks, it develops a rich, toasted, almost caramel-like aroma.

And when you add that beautiful golden butter to chocolate chip cookie dough?

Oh, honey. It's a game changer!

It adds a deep, buttery flavor that pairs perfectly with brown sugar, vanilla, and chocolate.

These aren't just ordinary chocolate chip cookies.

They're the kind of cookies that make someone stop mid-bite and ask:

"What did you put in these?!" 😂

And the best part? They're surprisingly easy to make!

🍪 Brown Butter Chocolate Chip Cookies Recipe

Prep Time: 20 minutes
Chill Time: 30–60 minutes
Bake Time: 10–12 minutes per batch
Total Time: Approximately 1 hour 15 minutes
Yield: Approximately 24 cookies

🛒 Ingredients

  • 1 cup (2 sticks / 226 g) unsalted butter

  • 1 cup packed light brown sugar

  • ½ cup granulated sugar

  • 2 large eggs, room temperature

  • 2 teaspoons vanilla extract

  • 2¼ cups (280 g) all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon kosher salt (use ½ teaspoon if using fine table salt)

  • 1½ cups semisweet chocolate chips or chopped chocolate

  • Optional: Flaky sea salt for topping

👩🍳 Step 1: Brown the Butter

Place the butter in a light-colored saucepan over medium heat.

Allow the butter to melt, stirring occasionally.

Once melted, it will begin to foam and bubble.

Continue cooking, stirring frequently and scraping the bottom of the pan, until the milk solids turn golden brown and the butter develops a delicious nutty aroma.

This usually takes about 5–8 minutes, depending on your stove.

Watch carefully! Brown butter can go from perfectly golden to burned in a matter of seconds.

Immediately pour the butter, including the browned bits, into a heatproof mixing bowl to stop the cooking process.

Allow it to cool for approximately 15–20 minutes, until warm rather than hot.

Baking Tip: Those little golden-brown bits at the bottom are packed with flavor. Don't leave them behind!

🥣 Step 2: Mix the Sugars

Add the brown sugar and granulated sugar to the cooled brown butter.

Whisk until well combined.

The mixture may look slightly grainy, and that's perfectly normal.

🥚 Step 3: Add Eggs and Vanilla

Add the eggs and vanilla extract.

Whisk vigorously for about 1 minute until the mixture looks smooth, glossy, and slightly thickened.

🌾 Step 4: Combine the Dry Ingredients

In a separate bowl, whisk together:

  • All-purpose flour

  • Baking soda

  • Salt

Gradually fold the dry ingredients into the wet ingredients using a spatula.

Mix just until no dry flour remains.

Avoid overmixing, which can make your cookies tough.

🍫 Step 5: Add the Chocolate

Gently fold in the chocolate chips or chopped chocolate.

For extra beautiful cookies, save a handful of chocolate pieces to press into the tops of the dough balls before baking.

Because let's be honest…

There's no such thing as too much chocolate! ❤️

❄️ Step 6: Chill the Dough

Cover the cookie dough and refrigerate for at least 30–60 minutes.

This step is important!

Chilling helps the dough firm up, prevents excessive spreading, and gives the flavors time to develop.

For even deeper flavor, refrigerate the dough overnight.

If chilled overnight, let it sit at room temperature briefly until it's scoopable.

🔥 Step 7: Bake the Cookies

Preheat your oven to 350°F (175°C).

Line two baking sheets with parchment paper.

Scoop the dough into approximately 2-tablespoon portions and place them about 2–3 inches apart.

Bake for 10–12 minutes, or until the edges are lightly golden and the centers still look slightly soft.

The cookies will continue setting as they cool.

For larger cookies, increase the baking time slightly.

❤️ Step 8: The Finishing Touch

Remove the cookies from the oven.

If desired, sprinkle each cookie with a tiny pinch of flaky sea salt while still warm.

Let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack.

Then comes the hardest part…

Trying not to eat every single one before they cool! 😂

✨ My Favorite Tips for Perfect Brown Butter Cookies

1. Don't rush the brown butter.

Let the butter develop that beautiful golden color and toasted aroma. This is where the magic happens!

2. Measure your flour carefully.

For the best results, use a kitchen scale. Too much flour can make cookies dry and cakey.

3. Don't skip chilling the dough.

Brown butter starts as melted butter, so chilling helps control spreading.

4. Use good-quality chocolate.

Semisweet chocolate chips are wonderful, but chopped chocolate bars create beautiful melted chocolate pockets.

5. Slightly underbake your cookies.

Pull them out when the edges are set but the centers still look a little soft.

6. Add a sprinkle of flaky sea salt.

That tiny touch of salt balances the sweetness and makes the chocolate flavor shine.

🍪 Fun Ways to Change Up This Recipe

🫙 How to Store Your Cookies

Store completely cooled cookies in an airtight container at room temperature for up to 4–5 days.

For longer storage, freeze baked cookies in a freezer-safe container for up to 3 months.

Want fresh cookies whenever the craving hits?

Scoop the cookie dough into individual portions and freeze on a baking sheet until firm.

Transfer the frozen dough balls to a freezer-safe bag.

When you're ready for cookies, bake directly from frozen at 350°F, adding approximately 2–3 minutes to the baking time.

Fresh homemade cookies without making an entire batch of dough? Yes, please!

They're the little traditions that remind us where we came from and the memories we hope to pass along.
