Ingredients
For the pork chops
- 4 pork chops (bone-in or boneless)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
For the balsamic glaze
- ½ cup balsamic vinegar
- 2 tablespoons honey or brown sugar
- 2 cloves garlic, minced
- 1 tablespoon butter
For the roasted veggies
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 red onion, cut into chunks
- 1 cup carrots, sliced
- 2 tablespoons olive oil
- Salt & pepper to taste
Instructions
1. Preheat oven
Preheat oven to 400°F.
2. Roast the veggies
Toss vegetables with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 20ā25 minutes until tender and slightly caramelized.
3. Season the pork chops
Rub pork chops with olive oil, garlic powder, Italian seasoning, salt, and pepper.
4. Cook the pork chops
Heat a skillet over medium-high heat.
Cook pork chops for 4ā5 minutes per side until browned and cooked through. Remove and set aside.
5. Make the glaze
In the same skillet, add balsamic vinegar, honey, and garlic.
Simmer for 5ā7 minutes until slightly thickened.
Stir in butter for a glossy finish.
6. Combine
Return pork chops to the skillet and coat with the glaze.
7. Serve
