Beef Taco Stuffed Zucchini Boats 🌮🥒🧀
These Beef Taco Stuffed Zucchini Boats are a fun, lighter twist on taco night! Tender zucchini halves are filled with seasoned taco beef, topped with cheese, and baked until bubbly and delicious.

Ingredients
For the zucchini boats
- 4 medium zucchini
- 1 tablespoon olive oil
- Salt & pepper to taste
For the taco filling
- 1 lb ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 cup salsa
- 1 cup shredded cheddar or Mexican blend cheese
Optional toppings
- Sour cream
- Diced tomatoes
- Green onions
- Jalapeños
- Avocado slices
Instructions
1. Preheat oven
Preheat oven to 375°F.
2. Prepare the zucchini
Slice zucchini in half lengthwise. Scoop out the centers slightly to create a “boat.”
Brush with olive oil and season with salt and pepper.
3. Cook the taco meat
In a skillet, cook ground beef until browned. Drain excess grease.
Add taco seasoning, water, and salsa. Simmer for 3–5 minutes.
4. Fill the zucchini
Place zucchini halves in a baking dish.
Spoon taco meat mixture into each zucchini boat.
5. Add cheese
Sprinkle cheese over the top of each zucchini boat.
6. Bake
Bake for 25–30 minutes until zucchini is tender and cheese is melted.
7. Serve
Top with sour cream, tomatoes, green onions, jalapeños, or avocado if desired.
