Ingredients
For the base
- 2 cups cooked rice (white, brown, or jasmine)
For the veggies
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 2 tablespoons olive oil
- Salt & pepper to taste
For the protein (choose one or mix)
- 2 cups cooked chicken (grilled or shredded)
- 1 lb ground beef or turkey
- 1 block tofu (cubed and sautéed)
- Shrimp (peeled & cooked)
For the sauce (choose your favorite)
- Teriyaki sauce
- Garlic butter sauce
- Ranch or chipotle ranch
- Honey mustard
- Soy sauce or sesame sauce
Optional toppings
- Shredded cheese
- Avocado slices
- Green onions
- Sesame seeds
- Crushed red pepper
- Fried or soft-boiled egg
Instructions
1. Cook the rice
Prepare rice according to package directions and keep warm.
2. Roast the veggies
Preheat oven to 400°F.
Toss vegetables with olive oil, salt, and pepper.
Roast for 20–25 minutes until tender and slightly caramelized.
3. Prepare protein
Cook your protein of choice:
- Grill or sauté chicken
- Brown ground meat
- Pan-fry tofu
- Cook shrimp until pink
Season lightly with salt, pepper, and garlic if desired.
4. Build your bowl
Add a scoop of rice, top with roasted veggies and protein.
5. Add sauce & toppings
Drizzle with your favorite sauce and finish with toppings.
6. Serve
