Ingredients

For the base

  • 2 cups cooked rice (white, brown, or jasmine)

For the veggies

  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 2 tablespoons olive oil
  • Salt & pepper to taste

For the protein (choose one or mix)

  • 2 cups cooked chicken (grilled or shredded)
  • 1 lb ground beef or turkey
  • 1 block tofu (cubed and sautéed)
  • Shrimp (peeled & cooked)

For the sauce (choose your favorite)

  • Teriyaki sauce
  • Garlic butter sauce
  • Ranch or chipotle ranch
  • Honey mustard
  • Soy sauce or sesame sauce

Optional toppings

  • Shredded cheese
  • Avocado slices
  • Green onions
  • Sesame seeds
  • Crushed red pepper
  • Fried or soft-boiled egg

Instructions

1. Cook the rice

Prepare rice according to package directions and keep warm.

2. Roast the veggies

Preheat oven to 400°F.
Toss vegetables with olive oil, salt, and pepper.
Roast for 20–25 minutes until tender and slightly caramelized.

3. Prepare protein

Cook your protein of choice:

  • Grill or sauté chicken
  • Brown ground meat
  • Pan-fry tofu
  • Cook shrimp until pink

Season lightly with salt, pepper, and garlic if desired.

4. Build your bowl

Add a scoop of rice, top with roasted veggies and protein.

5. Add sauce & toppings

Drizzle with your favorite sauce and finish with toppings.
