Cook Time: 30–35 minutes
Total Time: Approximately 55 minutes
Servings: 6

🛒 Ingredients

For the Creamy Chicken Filling

  • 3 cups cooked chicken, shredded or diced

  • 4 tablespoons unsalted butter

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • ⅓ cup all-purpose flour

  • 2 cups chicken broth

  • 1 cup whole milk

  • ½ cup heavy cream

  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)

  • ½ teaspoon dried thyme

  • ½ teaspoon poultry seasoning

  • ½ teaspoon salt, or to taste

  • ¼ teaspoon black pepper

  • Optional: ½ teaspoon garlic powder

For the Buttery Biscuit Topping

  • 1 can (8-count, approximately 16.3 oz) refrigerated homestyle biscuits

  • 3 tablespoons unsalted butter, melted

  • ½ teaspoon garlic powder

  • ½ teaspoon dried parsley

  • Optional: ¼ teaspoon Italian seasoning

Shortcut Tip: Use a store-bought rotisserie chicken and frozen vegetables to save time without sacrificing flavor!

👩🍳 Let's Get Cooking!

Step 1: Preheat Your Oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9" × 13" baking dish or a similar-sized oven-safe casserole dish.

Set aside while you prepare the filling.

Step 2: Sauté the Onion and Garlic

In a large skillet or saucepan, melt 4 tablespoons of butter over medium heat.

Add the diced onion and cook for approximately 3–4 minutes, stirring occasionally, until softened.

Add the minced garlic and cook for another 30 seconds, just until fragrant.

Your kitchen is already going to smell wonderful!

Step 3: Make the Creamy Sauce

Sprinkle the flour over the butter and onion mixture.

Stir continuously for approximately 1–2 minutes to cook away the raw flour taste.

Slowly pour in the chicken broth while whisking to prevent lumps.

Add the milk and heavy cream.

Continue stirring until the sauce begins to thicken, approximately 4–6 minutes.

You want a rich, creamy sauce that will coat the chicken and vegetables without being too thick.

Kitchen Tip: If your sauce becomes too thick, add a splash of chicken broth until it reaches your preferred consistency.

Step 4: Add the Chicken and Vegetables

Stir in the cooked chicken and frozen mixed vegetables.

Add the thyme, poultry seasoning, salt, pepper, and optional garlic powder.

Let everything simmer gently for approximately 3–5 minutes, stirring occasionally.

Taste the filling and adjust the seasonings as needed.

At this point, you'll have a delicious creamy chicken mixture that could practically be a meal all by itself!

But we're not stopping there.

We've still got biscuits to add! 🧈

Step 5: Assemble the Chicken Pot Pie

Pour the hot chicken filling into your prepared baking dish.

Spread it evenly.

Remove the refrigerated biscuits from their packaging.

For more even baking, cut each biscuit in half horizontally to make two thinner rounds.

Arrange the biscuit pieces across the top of the chicken filling, leaving a little space between them.

The biscuits will expand as they bake, creating a beautiful golden topping.

Step 6: Add the Buttery Topping

In a small bowl, combine:

  • Melted butter

  • Garlic powder

  • Dried parsley

  • Optional Italian seasoning

Brush approximately half of the butter mixture over the biscuit tops.

Save the remaining butter for after baking.

Because there's no such thing as too much buttery biscuit goodness! 😂

Step 7: Bake Until Golden and Bubbly

Place the baking dish on the middle oven rack.

Bake uncovered for approximately 25–35 minutes, or until:

  • The biscuit tops are beautifully golden brown.

  • The filling is hot and bubbling around the edges.

  • The biscuit centers are fully cooked and no longer doughy.

If the biscuits begin browning too quickly, loosely cover the dish with aluminum foil while they finish baking.

Important: Biscuit brands and thicknesses vary. Check the centers of the biscuits before serving; a golden top alone doesn't guarantee they're baked through.

Step 8: Brush with More Butter and Serve

Remove the chicken pot pie from the oven.

Brush the remaining seasoned butter over the hot biscuits.

Let the casserole rest for approximately 5–10 minutes before serving.

This allows the filling to thicken slightly and makes serving easier.

Then grab a big spoon and dig in!

✨ Tips for the Best Biscuit-Topped Chicken Pot Pie

1. Use rotisserie chicken.

This is one of my favorite kitchen shortcuts! It saves time and adds wonderful flavor.

2. Don't skip cooking the flour.

Letting the flour cook briefly in the butter helps create a smooth, delicious sauce without a raw flour taste.

3. Use frozen vegetables straight from the freezer.

There's no need to thaw them first. They'll cook beautifully in the filling and oven.

4. Make sure the filling is hot before adding the biscuits.

Hot filling helps the biscuits bake more evenly underneath.

5. Cut thick biscuits into thinner rounds.

This helps prevent doughy biscuit centers.

6. Don't forget that final butter brushing!

A little melted garlic-herb butter over freshly baked biscuits makes the topping extra delicious.

🥘 Easy Ways to Make This Recipe Your Own

One of the best things about homemade chicken pot pie is how easy it is to customize!

Cheesy Chicken Pot Pie

Stir ½–1 cup shredded sharp cheddar cheese into the creamy filling before transferring it to the baking dish.

Chicken and Mushroom Pot Pie

Add 1 cup sliced mushrooms while sautéing the onions.

Extra Creamy Chicken Pot Pie

Replace an additional ½ cup of the chicken broth with heavy cream for a richer filling.

Turkey Pot Pie

Have leftover Thanksgiving turkey? Substitute it for the chicken!

Homemade Biscuit Topping

Use your favorite homemade biscuit recipe instead of refrigerated biscuits. Adjust the baking time based on biscuit size and thickness.

Herb Butter Biscuits

Add a little fresh rosemary, thyme, or chives to the melted butter for an extra burst of flavor.

🥗 What to Serve with Chicken Pot Pie

This dish is already a complete meal with chicken, vegetables, and biscuits, but a few simple sides make it even better!

  • Fresh garden salad with homemade ranch dressing

  • Southern-style green beans

  • Roasted asparagus

  • Cucumber and tomato salad

  • Fresh fruit

  • Sweet iced tea

And if you're feeding a crowd, a warm peach cobbler or a batch of homemade chocolate chip cookies makes a wonderful dessert!

🧊 Storing and Reheating Leftovers

Refrigerator: Allow leftovers to cool, then store in an airtight container in the refrigerator for up to 3–4 days.

Reheating: Place individual portions in a microwave-safe dish and heat until steaming hot, or reheat in a covered baking dish at 350°F until the center reaches 165°F.

Freezing: For best results, freeze the cooked chicken filling separately in an airtight freezer-safe container for up to 2–3 months. Thaw overnight in the refrigerator, reheat the filling, then add fresh biscuits and bake.

The biscuit topping is best enjoyed fresh, as freezing and reheating can affect its texture.

❤️ Can You Make Chicken Pot Pie Ahead of Time?

Absolutely!

Prepare the creamy chicken filling up to 2 days ahead and refrigerate it in a covered container.

When you're ready to bake, reheat the filling until hot, transfer it to your baking dish, and arrange the biscuits on top.

Brush with seasoned butter and bake as directed.

This is a wonderful option for busy families, meal planning, or preparing dinner before a full afternoon in the quilting studio.

🧵 A Little Quilting, a Little Cooking & a Whole Lot of Love

Around here, some days are filled with cutting fabric, piecing quilt blocks, longarm quilting, embroidery projects, and packing orders.

And after a busy day, there's something wonderful about sitting down to a warm, homemade dinner.

That's one of the reasons I love recipes like this.

They're simple.

They're comforting.

And they bring everyone together without requiring hours in the kitchen.

Much like quilting, cooking is about taking individual pieces and bringing them together to create something special.

A little chicken.

A few vegetables.

A creamy sauce.

Some buttery biscuits.

Nothing particularly fancy on its own, but when everything comes together, it becomes something wonderful.

And isn't that a lot like making a quilt?

One piece at a time.

One stitch at a time.

One memory at a time.
