Recipe Details

  • Prep Time: 30 minutes

  • First Rise: 1–1½ hours

  • Second Rise: 30–45 minutes

  • Bake Time: 22–28 minutes

  • Total Time: Approximately 2½–3 hours

  • Servings: 12 large cinnamon rolls

  • Oven Temperature: 350°F (175°C)

🛒 Ingredients

For the Soft Cinnamon Roll Dough

  • 1 cup whole milk, warmed to 105–110°F

  • 2¼ teaspoons active dry yeast (one standard packet)

  • ½ cup granulated sugar, divided

  • 2 large eggs, room temperature

  • ⅓ cup unsalted butter, melted and slightly cooled

  • 1 teaspoon vanilla extract

  • 4 to 4½ cups all-purpose flour

  • 1 teaspoon salt

For the Buttery Cinnamon-Sugar Filling

  • ½ cup unsalted butter, softened

  • 1 cup packed brown sugar

  • 2 tablespoons ground cinnamon

  • ¼ teaspoon salt

For the Homemade Cream Cheese Icing

  • 4 ounces cream cheese, softened

  • ¼ cup unsalted butter, softened

  • 1½ cups powdered sugar

  • 1 teaspoon vanilla extract

  • 1–2 tablespoons milk or heavy cream, as needed

  • Pinch of salt

Optional Extra-Gooey Addition

  • ½ cup heavy whipping cream, slightly warmed

Pouring warm cream around the rolls just before baking creates an especially soft, rich result. This step is completely optional.

👩🍳 Step-by-Step Instructions

Step 1: Activate the Yeast

In a large mixing bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar.

Gently stir and allow the mixture to sit for approximately 5–10 minutes.

You should notice a foamy layer forming on top. This means your yeast is active and ready to work its magic!

Helpful Tip: Make sure your milk isn't too hot. Temperatures above approximately 120°F can damage yeast, so aim for 105–110°F.

Step 2: Make the Cinnamon Roll Dough

Add the remaining granulated sugar, eggs, melted butter, and vanilla extract to the yeast mixture.

Stir until combined.

Gradually add 4 cups of flour and the salt, mixing until a soft dough begins to form.

If the dough is excessively sticky, add additional flour 1 tablespoon at a time, up to approximately ½ cup more.

The dough should feel soft and slightly tacky—not dry or stiff.

Step 3: Knead Until Soft and Smooth

Turn the dough onto a lightly floured surface.

Knead for approximately 8–10 minutes until smooth and elastic.

If using a stand mixer fitted with a dough hook, knead on low to medium-low speed for approximately 5–7 minutes.

The dough should stretch without tearing immediately.

My little kitchen tip: Don't add too much extra flour! A soft dough is one of the secrets to fluffy cinnamon rolls.

Step 4: Let the Dough Rise

Lightly grease a large bowl with butter or cooking spray.

Place the dough inside, turning once to coat the surface.

Cover with a clean kitchen towel or plastic wrap.

Let rise in a warm, draft-free location for approximately 1–1½ hours, or until doubled in size.

While the dough rises, it's the perfect opportunity to enjoy a cup of coffee or sneak in a little sewing time! ☕🧵

Step 5: Prepare the Cinnamon Filling

In a small bowl, combine the brown sugar, cinnamon, and salt.

Set aside.

Make sure your butter is softened enough to spread easily without melting.

Step 6: Roll Out the Dough

Once the dough has doubled in size, gently punch it down.

Transfer to a lightly floured work surface.

Using a rolling pin, roll the dough into a rectangle approximately 16 × 12 inches.

Try to keep the thickness as even as possible.

Step 7: Add That Delicious Cinnamon Filling

Spread the softened butter evenly across the dough, leaving a small border along one long edge.

Sprinkle the cinnamon-brown sugar mixture over the butter.

Gently press the filling into the dough so it stays in place when rolling.

Now comes the good part… that buttery cinnamon-sugar goodness! ❤️

Step 8: Roll and Slice

Starting with the long 16-inch edge, roll the dough tightly into a log.

Pinch the seam closed.

Using a sharp knife or unflavored dental floss, cut the log into 12 equal rolls.

Baker's Tip: Unflavored dental floss makes beautifully clean cuts without squishing the soft dough.

Step 9: Let the Rolls Rise Again

Lightly grease a 9 × 13-inch baking dish.

Arrange the cinnamon rolls evenly in the dish, leaving a little space between them.

Cover and allow them to rise for another 30–45 minutes, until noticeably puffy.

Meanwhile, preheat your oven to 350°F.

Step 10: Optional Heavy Cream Trick

For extra-soft, gooey cinnamon rolls, slowly pour ½ cup of slightly warmed heavy whipping cream around and between the risen rolls immediately before baking.

This adds richness and helps create a tender, almost bakery-style texture.

You can absolutely skip this step if you prefer traditional cinnamon rolls.

Step 11: Bake Until Golden

Place the baking dish in the preheated oven.

Bake for approximately 22–28 minutes, or until the tops are lightly golden and the centers are cooked through.

If the tops begin browning too quickly, loosely cover the dish with aluminum foil during the final few minutes.

For a more reliable doneness check, the center of a roll should reach approximately 190°F.

Remove from the oven and let cool for 5–10 minutes before icing.

🍰 How to Make Homemade Cream Cheese Icing

While the cinnamon rolls are baking, prepare the icing.

  1. In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy.

  2. Add the powdered sugar gradually, mixing until incorporated.

  3. Stir in the vanilla extract and a pinch of salt.

  4. Add milk or heavy cream, 1 tablespoon at a time, until the icing reaches your preferred consistency.

  5. Beat until light, smooth, and fluffy.

The Secret to Perfectly Iced Cinnamon Rolls

Spread the cream cheese icing over the cinnamon rolls while they're still warm—but not piping hot.

The icing will soften slightly and melt into the cinnamon swirls, creating that irresistible gooey finish.

And y'all… don't be shy with the icing! 😂❤️

❤️ My Favorite Tips for Perfect Cinnamon Rolls

1. Use fresh yeast. Expired or inactive yeast can prevent your dough from rising properly.

2. Don't overheat the milk. Warm milk helps activate the yeast, but hot milk can damage it.

3. Keep the dough soft. Adding too much flour can make cinnamon rolls dense and dry.

4. Give the dough time to rise. Watch the dough rather than relying strictly on the clock. A cool kitchen may require more time.

5. Use softened butter for the filling. Melted butter tends to run out of the rolls.

6. Don't overbake. Cinnamon rolls are best when the centers are fully cooked but still soft and tender.

7. Ice while warm. This allows the icing to settle into all those delicious cinnamon layers.

🌙 Can You Make Cinnamon Rolls the Night Before?

Absolutely! And this is one of my favorite tricks for holiday mornings.

Overnight Cinnamon Rolls

Follow the recipe through Step 8, including arranging the sliced rolls in the baking dish.

Instead of allowing the second rise at room temperature, tightly cover the dish and refrigerate overnight for up to approximately 12–16 hours.

The next morning:

  1. Remove the cinnamon rolls from the refrigerator.

  2. Let them sit at room temperature for approximately 45–90 minutes, until puffy. The exact time depends on how much they rose overnight and the temperature of your kitchen.

  3. Preheat the oven to 350°F.

  4. Bake according to the recipe.

  5. Spread with freshly prepared cream cheese icing.

Imagine waking up on Christmas morning and having homemade cinnamon rolls ready for the oven without all the early-morning preparation!

That's my kind of holiday breakfast. 🎄❤️

🧊 How to Store and Reheat Cinnamon Rolls

Refrigerator

Because these cinnamon rolls are topped with cream cheese icing, store leftovers in an airtight container in the refrigerator for up to 4 days.

Freezer

For best results, freeze baked cinnamon rolls without icing.

Wrap individually and place in a freezer-safe container or bag.

Freeze for up to 2 months for best quality.

Thaw in the refrigerator and add fresh icing after reheating.

Reheating

Microwave an individual roll for approximately 15–25 seconds, checking that it's warmed through.

Or cover the rolls with foil and warm in a 300°F oven for approximately 10–15 minutes.

If reheating without icing, add a little fresh cream cheese icing before serving.

🍓 Delicious Cinnamon Roll Variations

Want to make this recipe your own? Here are a few fun ideas!

🍎 Apple Cinnamon Rolls: Add a small amount of finely diced, sautéed apple to the cinnamon filling. Cool and drain the apples before adding them.

🍁 Maple Cream Cheese Icing: Replace the vanilla extract in the icing with maple extract or a little pure maple syrup.

🥜 Pecan Cinnamon Rolls: Sprinkle ½ cup finely chopped pecans over the cinnamon filling before rolling.

🍊 Orange Cinnamon Rolls: Add fresh orange zest to the dough and a little orange juice or zest to the icing.

🎄 Holiday Cinnamon Rolls: Add a pinch of nutmeg or cardamom to the cinnamon filling for a festive twist.
