Ingredients
For the chicken
- 2 large chicken breasts (or 4 small)
- 3 tablespoons olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley (or fresh if preferred)
- ½ teaspoon salt
- ½ teaspoon black pepper
For the couscous
- 1 cup couscous
- 1 cup chicken broth or water
- 1 tablespoon olive oil or butter
- ½ teaspoon salt
Optional add-ins
- Cherry tomatoes (halved)
- Cucumber (diced)
- Feta cheese
- Fresh parsley
Instructions
1. Marinate the chicken
In a bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, parsley, salt, and pepper.
Add chicken and marinate for at least 30 minutes (or up to 4 hours).
2. Cook the couscous
Bring chicken broth (or water) to a boil.
Remove from heat, stir in couscous, olive oil/butter, and salt.
Cover and let sit for 5 minutes, then fluff with a fork.
3. Grill the chicken
Preheat grill to medium heat.
Grill chicken for 5ā7 minutes per side until fully cooked (internal temp 165°F).
4. Prepare couscous mix
Fluff couscous and add optional ingredients like tomatoes, cucumber, feta, and parsley for extra freshness.
