Sliced avocado

Crushed tortilla chips
-
Sliced jalapeños

Fresh lime wedges
-
Green onions
Kitchen Tip: Great Northern beans are my favorite for this recipe because they're tender and creamy, but cannellini beans or navy beans work beautifully too!
👩🍳 Let's Get Cooking!
Step 1: Add the Chicken
Place the boneless, skinless chicken breasts in the bottom of your slow cooker.
There's no need to cook the chicken beforehand.
That's one of the things I love most about this recipe!
Step 2: Add the Beans and Vegetables
Add the drained and rinsed Great Northern beans, corn, diced green chilies, chopped onion, and minced garlic.
Spread everything evenly around the chicken.
And y'all, it's already starting to look delicious!
Step 3: Season Everything
Sprinkle the cumin, chili powder, oregano, smoked paprika, salt, black pepper, and optional cayenne over the ingredients.
Pour the chicken broth over everything.
Give the ingredients around the chicken a gentle stir.
Step 4: Let the Slow Cooker Work Its Magic!
Cover and cook on:
-
LOW: 6–7 hours
-
HIGH: 3–4 hours
Cook until the chicken reaches an internal temperature of 165°F and is tender enough to shred easily.
Cooking times may vary depending on your slow cooker and the thickness of the chicken breasts.
Now go enjoy your day!
Work on that quilt.
Cut some fabric.
Finish up those embroidery orders.
Or just enjoy a little quiet time with another cup of coffee. ☕🧵
Dinner is taking care of itself!
Step 5: Shred the Chicken
Once the chicken is fully cooked, carefully remove it from the slow cooker.
Use two forks to shred it into bite-sized pieces.
Return the shredded chicken to the slow cooker and stir.
Step 6: Make It Creamy!
Add the softened, cubed cream cheese to the hot chili.
Cover and cook on HIGH for approximately 15–20 minutes, stirring occasionally, until the cream cheese has completely melted and blended into the broth.
Turn the slow cooker to WARM or LOW.
Stir in the sour cream and fresh lime juice until everything is smooth and creamy.
Helpful Tip: For an even creamier chili, mash about ½ cup of the cooked beans against the side of the slow cooker before adding the cream cheese.
This naturally thickens the broth without needing flour or cornstarch.
Step 7: Taste and Adjust
Give your chili a taste.
Add a little more salt, cumin, or lime juice if needed.
If the chili is too thick, stir in a splash of warm chicken broth.
If it's thinner than you'd like, mash some additional beans and allow it to heat through for a few more minutes.
Step 8: Serve and Enjoy!
Ladle the warm chili into bowls and pile on your favorite toppings.
My favorite combination?
A little shredded Monterey Jack cheese, crushed tortilla chips, fresh cilantro, and a squeeze of lime!
And if you've got some homemade cornbread on the side?
Oh my goodness, y'all!
That's a meal worth sitting down for. ❤️
✨ Tips for the Best White Chicken Chili
1. Use Chicken Thighs for Extra Flavor
Boneless, skinless chicken thighs are a wonderful substitute for chicken breasts.
They stay tender and juicy during slow cooking.
2. Don't Add the Cream Cheese Too Early
For the smoothest, creamiest texture, wait until the chicken is cooked before adding the cream cheese.
This helps prevent the dairy from separating during the long cooking process.
3. Drain and Rinse Your Beans
Rinsing canned beans removes excess sodium and keeps the chili's flavor balanced.
4. Adjust the Spice Level
This recipe is fairly mild.
If your family enjoys more heat, add extra cayenne, diced jalapeños, or a pinch of crushed red pepper flakes.
5. Use Fresh Lime Juice
That little squeeze of lime at the end brightens all the flavors.
Don't skip it if you can help it!
6. Make It Your Own
White Chicken Chili is one of those recipes that's easy to customize depending on what you've got in the pantry.
And around here, we love recipes that are flexible!
🌶️ Easy White Chicken Chili Variations
Extra Creamy White Chicken Chili
Add an additional ¼ cup sour cream at the end for an extra-rich finish.
Spicy White Chicken Chili
Add one diced jalapeño, extra cayenne pepper, or a few dashes of your favorite hot sauce.
White Chicken Chili with Rotel
Replace one can of green chilies with a drained 10-ounce can of diced tomatoes and green chilies for a slightly different flavor.
Lighter White Chicken Chili
Use reduced-fat cream cheese and plain Greek yogurt in place of sour cream. Stir the yogurt in off the heat to reduce the chance of curdling.
White Chicken Chili with Rotisserie Chicken
Already have cooked chicken?
Use approximately 3 cups of shredded rotisserie chicken.
Combine the beans, vegetables, broth, and seasonings in the slow cooker and cook on LOW for 3–4 hours, until the vegetables are tender.
Then stir in the cooked chicken and cream cheese and heat until everything is hot and creamy. Finish with the sour cream and lime juice.
It's a great shortcut for those extra-busy days!
🌽 What to Serve with Slow Cooker White Chicken Chili
This chili is a complete meal on its own, but a few delicious sides make it even better.
Some of our favorites include:
-
Warm homemade Southern cornbread
-
Buttery dinner rolls
-
Tortilla chips
-
Cheese quesadillas
-
A simple green salad
-
Mexican-style rice
-
Jalapeño cheddar cornbread
-
Fresh avocado slices
And if you're feeding a crowd, set up a little chili topping bar!
Everyone can customize their bowl with cheese, sour cream, chips, cilantro, jalapeños, and whatever else they love.
It's perfect for family gatherings, game days, or casual weekend dinners.
🧊 How to Store and Reheat Leftovers
One of my favorite things about this recipe is how delicious the leftovers are!
Sometimes I think the flavors are even better the next day.
Refrigerator: Transfer leftovers to shallow, airtight containers and refrigerate within 2 hours. Store for up to 3–4 days.
Freezer: You can freeze the finished chili for up to 2–3 months for best quality. Just keep in mind that cream cheese and sour cream may change texture slightly after freezing.
For the best freezer results, freeze the chili before adding the dairy. Then add the cream cheese and sour cream when reheating.
Reheating: Warm gently on the stovetop over medium-low heat, stirring occasionally, until the chili reaches 165°F.
Add a splash of chicken broth if it becomes too thick.
You can also reheat individual portions in the microwave, stirring halfway through.
❤️ Can You Make White Chicken Chili Ahead of Time?
Absolutely!
You can chop the onions, mince the garlic, measure the seasonings, and drain the canned ingredients the night before.
Store everything covered in the refrigerator.
When you're ready to cook, simply add the ingredients to the slow cooker along with the chicken and broth.
For food safety, keep the raw chicken refrigerated separately until cooking time and use thawed chicken rather than frozen chicken in the slow cooker.
And just like that, dinner is practically done before your day even begins!
🧵 A Little Cooking, a Little Quilting & a Whole Lot of Comfort
One of the things I love about slow cooker meals is how they fit into the rhythm of everyday life.
Especially around here at Johnson Heirloom.
Some days I'm working on a custom memory quilt, carefully arranging pieces of clothing that hold years of memories.
Other days I'm running the longarm, cutting fabric for quilt kits, or working on embroidery projects.
And before I know it, the afternoon has disappeared!
That's when I'm especially thankful for a slow cooker full of something delicious.
There's something comforting about knowing that while I'm busy creating handmade treasures in the quilting studio, a warm homemade meal is slowly coming together in the kitchen.
And really, cooking and quilting have quite a bit in common.
Both start with simple ingredients.
Both require a little patience.
And both have a way of bringing people together.
A quilt is made one piece at a time.
A homemade meal comes together one ingredient at a time.
And the memories?
Those are created in all the little moments along the way.
At Johnson Heirloom, our motto is:
Turning today's moments into tomorrow's treasures.
And I believe that applies just as much to the meals we share as it does to the quilts we make.
Because someday, someone might remember that warm bowl of chili, the laughter around the dinner table, or the way the whole house smelled while supper was cooking.
Those are the everyday memories worth holding onto. ❤️
🏡 A Recipe Worth Sharing
I think some of the best family recipes are the ones that don't require anything fancy.
Just simple ingredients, a little love, and a willingness to gather around the table.
This Slow Cooker White Chicken Chili is exactly that kind of recipe.
It's easy enough for a busy weekday.
Comforting enough for a chilly evening.
And delicious enough to share with family and friends.
Whether you're serving it for Sunday supper, bringing it to a family gathering, or making a big batch to enjoy throughout the week, I hope it becomes one of those recipes you come back to again and again.
