Ingredients

For the peppers

  • 4–6 large bell peppers (any color)
  • 1 tablespoon olive oil

For the filling

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon Italian seasoning
  • Β½ teaspoon salt
  • Β½ teaspoon black pepper

For topping

  • 1–1Β½ cups shredded cheese (cheddar or mozzarella)

Instructions

1. Preheat the oven

Preheat oven to 375Β°F.

2. Prepare the peppers

Cut tops off bell peppers and remove seeds. Lightly brush with olive oil and place in a baking dish.

3. Cook the filling

In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
Add diced onion and cook for 2–3 minutes, then add garlic and cook for 30 seconds.

4. Mix

Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.

5. Stuff the peppers

Spoon the filling evenly into each pepper.

6. Bake

Cover with foil and bake for 25–30 minutes.

7. Add cheese

Remove foil, sprinkle cheese on top, and bake uncovered for 10–15 minutes until cheese is melted and bubbly.

8. Serve

Let cool slightly and serve warm.
